In the future it will be a strong competitive advantage to ensure an optimal quality through all stages of the chain from fishing to retail thus assuring consumers at any time best eating quality. This will require an intact, unbroken cold chain from fishing consumer with quick turnover. Here, the Danish fisheries sector a clear advantage because it has a well-developed logistics system. But it will also require a system - a so-called traceability system - May prove to retail and / or consumer when the fish is caught. At the Danish Institute for Fisheries Research we have been working to develop such a system.
