Antioxidant and bioactive lipid differences between Sydney rock oysters Saccostrea glomerata and Pacific oysters Crassostrea gigas

Abstract
The global oyster industry produces around 6.1 million tonnes annually, valued at US$ 1.42 billion. In Australia, it generates AU$ 78 million (2023–2024), primarily through farming Saccostrea glomerata (Sydney rock oysters, SRO) and Crassostrea gigas (Pacific oysters, PO). While POs have been well studied for their nutritional profiles, limited data exists on SROs. This study compares the antioxidant activity, lipid and fatty acid compositions of Australian-grown SROs and POs. Both species showed similar antioxidant potential, with methanol extracts exhibiting the greatest activity (approximately 64 % at 1000 μg/mL) and containing bioactive compounds differing from those identified in previous literature. Lipidomic analysis revealed female SROs had the highest lipid content in the gonad (25.3 % of dry tissue mass) exceeding that of SRO males and both sexes of POs (16.2 %–19.4 % of dry tissue mass). SROs contained more glycerophospholipids, while POs had higher levels of glycerolipids and sterols. Both species were rich in ω-3 fatty acids, with docosahexaenoic acid (DHA) most concentrated in gonads (16,145–21,671 μg methyl tridecanoate equivalent/g dry oyster tissue). Additionally, both oysters exhibited ω-3/ω-6 ratios of 9–12 which are higher than previously reported, suggesting enhanced nutritional value in Australian-grown oysters.
