Abstract
Tertiary dietetic education aims to develop the professional knowledge, skills and identities of students to meet competency standards for entry level dietitians. As students' acquire technical nutrition knowledge (NK) they experience substantial cognitive restructuring involving dynamic interrelationships with physical, social and psychological factors. Currently there is a lack of research examining the NK of nutrition students or its role in their career selection as well as academic and professional development. This research intends to describe the level of NK in students enrolled in Nutrition and Dietetic (ND) programs at a regional university and investigate variation across year-levels and to other allied health disciplines. Students enrolled in ND, Nutrition or Occupational Therapy (OT) undergraduate programs at the University of the Sunshine Coast were invited to participate in an online survey in August 2013. The survey consisted of three components: the validated Australian General Nutrition Knowledge Questionnaire, socio-demographic characteristics and other questions related to career choice. A total of 76 ND students, 32 Nutrition and 56 OT students completed the questionnaire, the majority of whom were female (87%). Preliminary data shows most ND and Nutrition students selected their degree due to personal interest in nutrition (75%). Future results will determine the average NK level of each cohort and explore interrelationships with demographic characteristics and various nutrition-related factors within context of formal education. Such research has potential to benefit the dietetic profession by informing curricular design and delivery.
